Mushroom, Spinach, Feta & Basil Frittata

An easy breakfast recipe that’s perfect for brunch, lunch, dinner or weekday breakfasts.


6 large eggs

2 tbsp water

1/2 tsp salt

Pinch black pepper

1 onion chopped

2tbsp butter for frying

1 clove garlic crushed

1/2 cup mushrooms chopped

1 cup baby spinach leaves

A handful of basil leaves

A pinch of ground nutmeg

1/2 cup feta


  1. Break the eggs into a mixing bowl, add water and beat lightly

  2. Place the onion and butter in a frying pan and cook over medium heat for 3 min

  3. Add garlic, mushrooms and cook 2 min

  4. Add spinach leaves, basil and nutmeg cook for 1 min

  5. Poor the egg mixture and cook for 1 min - but do not stir

  6. Reduce the heat

  7. Crumble fetta over the top

  8. Continue to cook without stirring

  9. Transfer the pan to the oven and finish off for a min under the grill

  10. Garnish with fresh basil
