This one is an oldie - but a goldie! Comfort food bliss!
5 Chicken fillets
Salt & pepper
Juice & peel 1 lemon
250g Mushrooms sliced
3 Eggs beaten
250g Smooth cottage cheese
250ml grated mozzarella
Pre-heat oven and smear oven dish.
Flavor the chicken with salt, pepper and lemon juice and peel.
Fry the chicken for 5 to 7 minutes until brown.
Cut up the chicken into fine pieces.
Fry the mushrooms until brown.
Add the spinach and cook until it wilts.
Beat the eggs and cottage cheese together.
Add the chicken and mushroom spinach mixture together with the eggs and stir lightly.
Put the mixture into the prepared dish.
Sprinkle the cheese on top and bake for 30 to 40 minutes or until the eggs have set and the cheese has melted.
Serve with a salad.
