This buffalo cauliflower salad is loaded with cauliflower and topped with a creamy vegan ranch dressing made from cashews.
1 head of cauliflower chopped 7 tbsp mild wing sauce ¾ cup Panko bread crumbs or Gluten Free bread crumbs 3-4 cups spring greens ⅓ cup red onion sliced or diced ½ cup tomatoes diced ½ cup sliced cucumber 6 tbsp Vegan Ranch Dressing
1). Preheat the oven or air fryer to 220c.
2). In a big bowl add your chopped cauliflower, wing sauce, and bread crumbs and stir to coat well.
3). Then place on a parchment-lined baking sheet and bake or air fry for 20 minutes or until crispy.
4). In another bowl, assemble your salad and top with the cooked cauliflower wings and enjoy with ranch drizzled on top.
